Eat Me Spinach!

Spinach is one of those dark leafy vegetables you either love or hate. I happen to love spinach. Every few days when I was growing up, my mom would sauté spinach in some oil and garlic and that would be our veggie for dinner. Always liked it; always will. At our local grocery store, I can get a GIANT bag of fresh spinach for $2.79, so each week I pick some up. I literally throw it in a big skillet with some olive oil and let it cook down for a few minutes.


When it's almost done, I mince some garlic and throw it in and let it cook for a few more minutes. There's always some leftover, which is great, because there is nothing like a cold spinach sandwich the next day.


Just take two pieces of bread and pile it high with the cold leftover spinach, sprinkle with salt (it always seems to lose its saltiness in the refrigerator overnight) and top with the other piece of bread. It is sooooooo yummy! And I have to think it's loaded with all sorts of stuff that's good for you!
